
Starting a new blog I finally get to participate in all these fun blog carnivals I read weekly! Yay!
This week's WFMW is themed. What do I fix, when the clock is approaching 5:15, and I need dinner ready before my handsome hubby walks through that door?
It's easy. It's healthy. It's yummy.
Lemon Honey Chicken Over Salad (Serves 4)
4 Boneless Skinless Chicken Breasts
1 1/2 c Lemon Juice
1/4 c Honey
1 T Salt
1 t Pepper
Salad
Shredded Cheese
Whisk lemon juice, honey, salt, and pepper together. Marinate the chicken breasts in mixture for about 10 minutes. While the chicken is marinating turn the broiler on and throw together your salad.
After the chicken has marinated (10 minutes is enough, but if you have longer--do it! The flavor will be even more vivid.) put it on a broiler pan and broil it for approximately 4 minutes per side.
Slice the chicken into thin strips and serve over your salad. Sprinkle cheese on top, if you like, and voila! You have a healthy, yummy, 2 in 1 course meal!

It sounds delicious. I am going to have to try it out!
It really is quite yummy, and the longer it marinates the better! Sometimes I start it in the morning, and by dinner time it's so tangy and sweet--YUM!
